Last night’s dinner was a “build your own” burger. Angus beef, grilled pineapple, bacon, lettuce, smoked gouda cheese, garlic aioli, and bourbon barbeque dipping sauce all on a focaccia roll. Deeeelicious!

Sourdough bun made by me. And yes with several weeks old starter. Meat patties made by me. And yes there is beetroot @sburn
Nicely done. The American judge deducts a point for the beetroot, but adds ten for the homemade sourdough bun. If there’s a rank beyond “Burger Innovator”, it’s yours. @tankjnr
My hamburger meat recipe:
2 lbs of 80/20
1/2 lbs of Chorizo (you may want to cook out a little bit of the grease and drain it. Some Chorizo tends to be too greasy)
2 egg yolks
1 Tablespoon of EVOO
Pinch of cilantro
1/4 cup of bread crumbs that have been soaked in whole milk then drained
The rest is to your taste:
Use a Tapatio/Mayo/Ketchup mix. 75/25 Mayo/Ketchup then Tapatio till it’s hot enough for you.
Crumble this cheese on top:
